burrito on plate

Here’s a recipe from Ty Jones at Fit For Life in Marietta, Georgia, for a healthy burrito to sink your teeth into. Whole grains, lean protein and crunchy veggies make this a recipe that you’ll come back to time and again. Serve with a side of your favorite salsa.

Servings: 1

Here’s what you need…
• 1 sprouted grain, flourless tortilla
• 1 Tablespoon hummus
• 1/3 cup cooked brown rice
• 1/4 cup cooked black beans
• 1/2 cup cooked chicken, chopped (or baked tofu)
• 2 Tablespoons fresh corn kernels
• 2 Tablespoons chopped cucumber
• 1/4 cup shredded arugula
• 3 cherry tomatoes, chopped

1. Warm the tortilla in a dry skillet. Spread the hummus evenly over the tortilla.
2. Top the tortilla with rice, beans, chicken and veggies.
3. Fold the two sides of the tortilla in over the filling, then flip up the bottom edge and roll tightly.

Nutritional Analysis: One serving equals: 380 calories, 7.8g fat, 45g carbohydrate, 7g fiber, and 31g protein.

Petitions by Change.org|Start a Petition »

Water is everywhere, right? Actually, for such a plentiful resource, clean water is surprisingly scarce. Less than 1% of all fresh water is readily accessible for direct human use, representing only 0.007% of all water on earth. Bet you didn’t know that. Check out five more clean water facts that you might not know:

1. Unsafe drinking water and lack of sanitation kills more people every year than all forms of violence, including war.
2. More people have access to a cell phone than to a toilet. Today, 2.5 billion people lack access to toilets.
3. Every day, women and children in Africa walk a combined total of 109 million hours to get water.
4. It takes 6.3 gallons of water to produce just one hamburger. That 6.3 gallons covers everything from watering the wheat for the bun and providing water for the cow to cooking the patty and baking the bun.
5. The average American uses 159 gallons of water every day – more than 15 times the average person in the developing world.

Read this article in its entirety here.

While these facts may be grim, there is hope for real solutions as more and more people around the world are waking up to the clean water crisis. Earlier this year, the UN declared access to clean water a human right and groups like Water.org and charity: water continue to work tirelessly to bring water access to the developing world.

Thank Goodness It’s Feed Your Good Dog Friday!

May 28, 2010 by Rose Caplan

In Memory of Sylvia Caplan (1935 – 2010), who watched over, loved and protected her family and friends during her lifetime and continues to do so as the following poem suggests:

I give you this one thought to keep –
I am with you still – I do not sleep.
I am a thousand winds that blow,
I am the diamond glints on snow,
I am sunlight on ripened grain,
I am the gentle autumn rain.
When you awake in the morning’s hush
I am the swift, uplifting rush
Of quiet birds in circled flight.
I am the soft stars that shine at night.
Do not think of me as gone –
I am with you still – in each new dawn.

TGIFYGDF…Thank Goodness It’s Feed Your Good Dog Friday!

April 2, 2010 by Rose Caplan

Whether you celebrate Passover, Easter, or Life’s renewals this time of year, take a day this weekend to “power down” and “stop and smell the roses”.

Reboot, a non-profit group of Jewish artists in search of a modern way to observe a weekly day of rest, provide us with a guide to do so. The guide is inherent in Reboot’s creative project The Sabbath Manifesto , which is designed to slow down lives in an increasingly hectic world.

Following are some of the core prinicples from the Sabbath Manifesto’s Provisional Guide for Observing a Weekly Day of Rest.

  • Avoid technology.
  • Connect with loved ones.
  • Nurture your health.
  • Get outside.
  • Find silence.
  • Give back.

Reboot also, this year, initiated a National Day of Unplugging. Thousands unplugged from cell phones, ipods, computers, etc. from Sundown, Friday, March 19 to Sundown, Saturday, March 20. The people in this YouTube video tell us how and why they unplug, or. . . not.

”Writing

National Women’s History Week was first celebrated in March, 1980. This was made possible by The National Women’s History Project (NWHP). NWHP lead the efforts of thousands of individuals and hundreds of educational and women’s organizations to make sure it happened then and for each and every year thereafter. In 1987, after national recognition, multi-state declarations of National Women’s History Month, and further NWHP lobbying efforts, Congress declared March as National Women’s History Month in perpetuity. A special Presidential Proclamation is issued every year which honors the extraordinary achievements of American women.

This year to mark their 30th year, NWHP’s theme is Writing Women Back into History. To honor this theme, NWHP has highlighted pivotal themes from previous years. Each of these past themes recognizes a different aspect of women’s achievements, from ecology to art, and from sports to politics.

Take a few minutes this weekend to remember and honor the contribution of the women in your life in general. You may also be inspired by the list of more than 230 NWHP’s honorees which you can access here.

Additionally, the NWHP is holding an on-line auction through March 31 to raise money for its cause. If you are a history buff, or if you would like to support NWHP continue its educational mission to ensure a place for women in our history, you can check out the auction here.
